Great fresh eating in the fall. Or, we like to plant in the spring, lop off foliage in fall while leaving the tubers in the ground over winter. Then, come spring, we harvest tubers for the first fresh eating of the year. Very tasty roasted with onion, dash of garlic, salt and pepper!
